Grilled Salmon with Lemon and Dill

ingredients:

  • 4 salmon fillets (6 oz. each)
  • 2 tbsp. olive oil
  • tbsp. lemon juice
  • 2 tbsp. chopped fresh dill
  • Salt and pepper

instructions:

  • Preheat grill to medium-high heat.
  • Brush both sides of salmon fillets with olive oil and sprinkle with salt and pepper.
  • Grill salmon for 3-4 minutes per side, or until cooked through.
  • In a small bowl, mix together lemon juice and chopped dill.
  • Drizzle lemon dill sauce over cooked salmon and serve.

Roasted Sweet Potato Wedges

ingredients:

  • 2 sweet potatoes
  • 2 tbsp. olive oil
  • 1 tsp. paprika
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

instructions:

  • Preheat oven to 400°F.
  • Scrub sweet potatoes and cut them into wedges.
  • In a small bowl, mix together olive oil, paprika, salt, and pepper.
  • Toss sweet potato wedges with the olive oil mixture until coated.
  • Arrange sweet potato wedges on a baking sheet in a single layer.
  • Roast sweet potato wedges in the preheated oven for 25-30 minutes, or until tender and crispy.
  • Serve hot.
